many

that
we

the
largest
full
service,
fresh
Mexican
restaurant
company
in
New
England.
We
currently
have 18
locations
that
each
do
an
average
annual
gross
sales
of
2.5
million
dollars
and
we
are
expanding.
We
are
very
financially
solvent.
In
other
words,
we
have
internally
funded
our
growth,
we
leave
money
in
the
company
and
we
do
not
have
to
answer
to
a
bunch
of
bankers
or
Wall
Street
executives.
We
grow
at
a
pace
that
is
comfortable
to
our
people
and
does
not
jeopardize
the
quality
of
our
current
concept/locations.

Our
people
are
preparing
the
food
throughout
the
day,
but
our
restaurants
do
not
open
until 4pm
daily.
We
have
a
few
locations
that
open
for
lunch
on
a
limited
basis,
but
our
philosophy
is
based
on
doing
one
great
show
a
day.
This
makes
for
a
happier
staff
and
a
happier
management
team.
Why
sell
the
same
food
at
a
discounted
price
to
folks
that
are
in
a
rush
and
will
probably
not
have
an
appetizer
or
dessert?
We
want
them
to
come
in
for
dinner
with
their
family
and
friends,
relax,
have
a
cocktail,
an
appetizer,
dinner,
dessert…enjoy
themselves.
It
is
all
about
the
experience,
enjoying
yourself
and
having
fun.
Less
sales
perhaps,
but
a
better
quality
of
life
and
profitability.

Yes,
we
have
a
number
of
locations,
but
we
do
not
look
like
or
act
like
a
cookie
cutter
franchise.
Each
Margaritas

same

drinks,
service,
systems
and
Mexican
décor.

location
is
unique

Concord,
NH
Margaritas
is
located
in
the
old
police
station.
You
can
actually
dine
in
a
jail
cell.
Nashua
Margaritas
resides
in
what
was
once
a
foundry
with
a
hydro
dam;
you
can
dine
on
the
Nashua
River.
Our
greatest
source
of
pride,
our
decor,
comes
from
a
place
far
cooler
than
a
catalog.
We
actually
bring
employees
and
managers
down
to
Mexico
to
absorb
the
culture,
get
ideas
and
purchase
furniture,
decorations
and
art
from
local
artists.

do
not
have
a
text
book
manual
for
everything.
Our
product,
our
food
and
drink,
is
always
fresh.
We
don't
open
bags
and
throw
things
into
microwaves.
Yes,
we
have
employee
and
food
manuals,
yet
we
leave
many
decisions
to
the
manager’s
discretion.
All
of
our
management
teams
are
trained
in
all
positions
in
the
restaurant.
Because
of
our
commitment
to
food
quality
and
consistency,
each
manager
is
required
to
work
a
shift
a
week
in
the
kitchen
to
keep
his/her
culinary
skills
current.
It’s
good
for
our
food
and
good
for
our
people.

believe
in
promoting
from
within.
Many
of
our
great
managers
were
once
dishwashers,
cooks,
servers
bartenders.
Nonetheless,
Margaritas
also
believes
in
hiring
and
training
leaders
from
the
outside.
All
of
our
corporate
management
and
upper
management
people
were
once
location
managers.
Also,
our
management
system
is
designed
to
give
location
managers
a
sense
of
autonomy.
Although
there
is
a
strong
support
system
for
managers,
Margaritas
believes
in
empowering
its
managers
with
the
authority
and
responsibility
of
running
a
restaurant
as
if
it
were
their
own.
Everything
from
leading
and
developing
the
employees,
to
the
facilities,
back
of
the
house
and
the
financial
statements,
are
the
responsibilities
of
location
management.
